Tacos al pastor


So I bought an ironcast pan, had a skewer molded in the middle. Bought the stuff needed for the marinade and stacked it on the skewer with fresh pineapple halves on the bottom and on the top. And of into the oven ot went, on 150 degrees Celsius, for about 2.5 hrs. And because I was using a thermometer to check the core temperature, I took it out at core temp of 80 degrees as my family was worried it wasn’t enough done yet… it came out juicy and yummy, but I redid the whole thing a few days later and took it out at 70 degrees C, which was equally good.

Served it with wheat tortillas, guacamole and onions. Plus some heat of course – salsa verde and chile habanero. Was delish!

    How did you manage to keep charring every slice?

    Or was it just on the outside?
