Knowing that many are practicing social distancing, Sarah Giosi will be offering tips and recipes that use staple food items that many have stocked up on. In this episode, she shares a recipe for Sweet Potato & Black Bean Chili.
Ingredients:
3 large sweet potatoes, peeled and cut into 1/2-inch cubes
1 large onion, chopped (or onion powder to taste!)
2 tablespoons chili powder
3 garlic cloves, minced (or garlic powder to taste!)
½ red pepper, diced
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cans (15 ounces each) black beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
1/2 teaspoon salt
1/4 teaspoon pepper
32 oz. vegetable broth
6 oz. tomato paste
Directions:
Wash, peel and cube or dice your onion, sweet potatoes, garlic, and red pepper.
Combine all ingredients in a crockpot. Set to high for 3-4 hour or low for 7-8. If cooking stove-top: Bring to a boil, reduce heat, cover and simmer for 30-35 minutes or until sweet potatoes are tender.
