To begin this recipe chop up the following ingredients:
2 small shallots
1/2 of a medium brown onion
1/2 of a green bell pepper
1/2 of a red bell pepper
2 tomatoes
2 cups of jackfruit
1 piece of celery
1 jalapeño
In a large pot add the following ingredients
Chopped ingredients listed above
Avocado oil
1/2 cup of black beans
1 cup of kidney beans
1 cup of pinto beans
13 cups of spring water
1 cup of tomato paste
1 cup of pumpkin paste + 1 cup of chopped pumpkin ( this is optional you can follow the recipe without the pumpkin and still have a delicious traditional chili recipe. This is our fall version of chili)
For seasoning we used the following seasonings:

3 Tbsp of sea salt ( adjust to your preference if needed )
Once you have added all of the ingredients into your pot, cover with a lid and cook on a medium high heat for about 2 hours or until all beans are fully cooked.
Stir the chili periodically and if needed add more water or salt as the chili cooks
Once the chili is done cooking serve your chili topped with green onions & enjoy!
