Easy chili made luxuriously thick and hearty with quinoa. This chili is a “concept” with simple substitutions, it can easily become vegetarian or add ground cooked meat if you like. All made with pantry staples.
Ingredients for this Recipe:
1 onion, chopped
2-3 carrots, chopped
1 bell pepper, chopped
4-6 cans any style of beans including juice
32oz diced tomatoes
1c salsa – or more or less if desired
1 cup tri-colored quinoa
4 c veggie stock
2tsp veggie bullion
Spices:
1tbsp each – cumin, coriander, garlic powder, chili powder +
1 tsp smoked paprika
Sea Salt & Pepper to taste
