ā” Easy slow cooker chili ā”
Youāll need ~
Essential- Crockpot
Ingredients:
1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, finely chopped
3 cloves garlic, finely minced
2 (14.5 oz) cans diced tomatoes with (green chilies- optional)*
3 (8 oz) cans tomato sauce
1/4 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, drained and rinsed
1 (15 oz) can light red kidney beans, drained and rinsed
Shredded cheddar cheese & Corn Bread for serving ā”
Directions ~
Chop up your yellow onion & garlic.
Add onion to a skillet heated on medium heat with olive oil.
SautƩ but do not brown*
Once onion is sautƩd & soft add garlic and sautƩ for another minute.
Add the onion & garlic to the crockpot (do not plug in crockpot until ready to cook)
Put skillet back on medium heat & add more olive oil.
Add ground beef and brown stirring frequently.
Once beef is browned drain some fat but not all (some is good for flavor)
Add ground beef to crockpot & add your sauce, tomatoes & spices.
Mix very well & cover.
Plug in & set to low for 6 hours.
Frequently mix the chili throughout cooking time- I will do every hour or so.
Taste test as you mix & add anything you may need more of!
About 10 minutes prior to serving add the beans. Drain them, rinse & add to your chili!
With all of my tweaks the recipe has a little kick to it (just how we like it). If you donāt like an extra kick use regular diced tomatoes instead of the chili style!
