
White corn tortillas + monterey jack + canned nopalitos + shrimp katsu + sriracha mayo and cilantro salsa. Loosely inspired by gobernador tacos.
Notes: I forgot to buy flour so the breading didn’t stick to the shrimp well, but it still worked out lovely. The panko crumbs were mixed with coriander and lime. I would have used Oaxaca or Chihuahua cheese (more common for gobernador tacos), but shredded monterrey jack was the best I had on hand. I added a little extra cheese after cooking too, just because.
