Quarantine Recipe: The Best Chili Ever!

Serves 4:

Ingredients:

1 lb of ground pork
1 can of butter beans
1 tbsp red pepper paste or tomato paste
3 strips of bacon cut into pieces
8 small sweet bell peppers chopped
1 yellow onion chopped
1/2 tsp cinnamon
1/2 tsp cardamom
1/2 tbsp smoked paprika
1/2 tbsp ancho chili powder
1 tsp of onion powder
1/2 can of crushed tomatoes
1/2 cup of red wine

Directions:

1.) In a large pot, cook your bacon on medium high until it starts to get a little crispy. Reserve the bacon and add the ground pork, browning it on both sides. Start breaking up the meat with a wooden spoon, and once its cooked reserve it for later.

2.) Add the onions and cook them on med high and then add all your spices and the peppers. Let this all cook for 10 min or until the vegetables begin to soften. Add the red wine to deglaze the pan and cook on high until there is a tbsp of liquid left.

3.) Add the red pepper paste letting it cook for a few min, Add the chopped tomatoes, beans, bacon, and ground pork back into the pot. Add 1/2 cup of water and let it simmer for 30 min. Garnish with scallions and it’s best enjoyed with tortilla chips!
