8 oz. Mushroom
½= each Bell Pepper | Capsicum | Simla Mirch (Green / Orange / Red / Yellow)
2= Tomatoes
1= Red Onion
2= Tbsp. Cilantro
1= Tsp each (Black Pepper / Coriander Powder / Cumin Powder / Turmeric Powder / Garam Masala / Salt)
2= Green Chilies
1= Tbsp. each (Ginger Paste / Garlic Paste)
1= Tsp each (Cumin Seed / Mustard Seed)
2= Tbsp. Olive Oil
2= Tbsp. Tomato Sauce

Substituted Olive oil (not exactly "Indian" ;-D) with coconut oil.
I only had a red capsicum so the result was rather monochromatic, but the flavour was great.
I'm single and have cooked "Indian" for years. It is the BEST fast food – including yoghurt chapatis which can be ready in 15 – 20 minutes!
Quantities here are enough for four meals. Three in the freezer!
Served with Basmati rice and, probably not vegan, with a dollop of yoghurt
