What’s in the cup?


I saw this soup? months ago in a YouTube video of best food trucks in US, and I’ve been wanting to try it but I could never find that video again or what it’s called.

    Consomé. Meat juice. It’s like the drippings of the meat and juices.

    You can add onion and cilantro for even more flavor. You dip your tacos in there and drink it too

    Consomé, it’s the stew the meat is cooked in for birria tacos, lots of deep flavor in that but Those tortillas are lacking big time

    That is consomé, is the meat juice, you need add salsa roja, and some limón (mandatory to be sour lime, green, not the yellow type) and chopped onion and cilantro.

    Then you soak your taco in it. Or you can use a spoon or drink it direct from the cup.

    As others have said, it’s called consome and it’s the juices left from cooking birria with onions and cilantro added – that’s the key word you want to look for, either just birria tacos, or quesabirria, which is with cheese. Usually taco trucks have birria de res, which is beef. You can also find birria in the form of a stew. Dunk the taco in the consome.

    You’re supposed to dip the tacos in it and then eat the rest like soup

  13. It’s the French dip of tacos. I made 4lbs of meat and a quart of consume recently. Ben eating them for a week.

    I made these birria tacos yesterday and today I used the rest to make vitrina ramen. TBH I figured it was a trendy thing that would be ok but it was quite good

  16. It’s birria, it was never meant to be eaten as a taco, do yourself a favor and before you get yourself birria tacos get a bowl of birria with all the garnishes

    Consume. Pronounced “Con su may” for our English only friends. It’s the meat juice from birria that you dip your delicious birria tacos in.

    Its cosome. It just the liquid that the meat was cooked in. Drink it or dip your tacos in it. All the flavor is in there.

    It is consome not consommé. It took me a solid day of googling to realize that they are different things.

    I kept wondering why none of the birria recipes had egg whites.

    That’s birria. You dip the tacos in the sauce for an amazing burst of flavors in your mouth.
