That’s birriamen, a mix of Japanese and Mexican food, Japan and mexico are countries with really good political relationship and good citizen relationship, me as Mexican even got japanese family because of how in business words close our countries are, uncle used to go every like 3 months for business, mexico shows other countries love by mixing our foods like tacos being a mix between turkey food and Mexican food from back when turkey refugees came and Mexicans eventually accepted em as our own citizens
So if y’all some day, randomly on a restaurant in mexico find a mix of some classic food from your country, be happy, you are welcome here as one brother more :³

Birria Ramen has been available in the SF Bay Area for years now and is delicious.
There’s a food truck near Chase Center that I go to when I get the chance and order the Birria Ramen.
There are several sit down restaurants that serve it.

I don’t have pics, but my Thai neighbor has been putting bamboo shoots and rice noodles with their birria. I tried it out, and it’s actually really good.
