Veggie Protein Chili Recipe
Ingredients:
1 cup of dried lentils (brown or green)
1 can (15 ounces) of kidney beans, drained and rinsed
1 can (15 ounces) of black beans, drained and rinsed
1 can (15 ounces) of diced tomatoes
1 large onion, diced
3 cloves of garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeño pepper, minced (optional for heat)
2 carrots, diced
2 celery stalks, diced
2 tablespoons of olive oil
2 tablespoons of chili powder
1 tablespoon of cumin
1 teaspoon of paprika
1 teaspoon of oregano
Salt and black pepper to taste
4 cups of vegetable broth
1 cup of corn kernels (fresh, frozen, or canned)
Chopped fresh cilantro, avocado slices, and vegan sour cream for garnish (optional)
Instructions:
1. Rinse and Cook Lentils: Start by rinsing the dried lentils thoroughly and then cooking
them according to the package instructions until they are tender. This usually takes
about 20-25 minutes. Drain any excess water and set aside.
2. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced
onion, garlic, red and green bell peppers, jalapeño (if using), carrots, and celery.
Sauté for about 5-7 minutes, or until the vegetables start to soften.
3. Season and Stir: Add the chili powder, cumin, paprika, oregano, salt, and black
pepper to the sautéed vegetables. Stir well to coat the vegetables with the spices.
4. Combine Ingredients: Add the cooked lentils, kidney beans, black beans, diced
tomatoes (with their juice), and vegetable broth to the pot. Stir everything together.
5. Simmer and Cook: Bring the mixture to a boil, then reduce the heat to low. Let it simmer
uncovered for about 30-40 minutes, allowing the flavors to meld and the chili to thicken.
Stir occasionally.
6. Add Corn: About 10 minutes before serving, add the corn kernels to the chili and continue
simmering.
7. Serve: Ladle the Veggie Protein Chili into bowls, garnish with chopped cilantro, avocado
slices, and a dollop of vegan sour cream if desired. Enjoy your delicious and nutritious
