Vegetable Sotanghon Soup
Ingredients:
3 cloves garlic
1 red onion
1 stalk spring onion
2 small carrots
1 bell pepper
1 cup chinese cabbage
1 cup cabbage
100g shiitake mushrooms
100g vermicelli noodles + hot water
3 tbsp annatto oil
2 cups mushroom stock
3 cups water
salt and pepper to taste

Tofu and Kimchi Stew (Tofu Kimchi Jjigae)
Ingredients:
5 cloves garlic
1 red onion
1 stalk scallion
2 king oyster mushrooms
50g enoki mushrooms
300g soft or firm tofu
2 tbsp sesame oil
1 cup vegetable kimchi
800ml water
1 tbsp soy sauce
1 tbsp vegetable stock powder
1-2 tbsp gochuchang (red chili paste)

Veggie Tinola
Ingredients:
Tofu “Chicken”
200g silken tofu (pressed, freezed and thawed for three cycles)
2 tbsp nutritional yeast
2 tbsp cornstarch
2 tbsp soy sauce
2 tbsp water
oil spray
air fry at 180°C for 10-12 minutes, flip halfway

2 tbsp olive oil
5 cloves garlic
1 thumb ginger
1 red onion
2 medium sayote / chayote
200g king oyster mushrooms
salt and pepper
2 cups vegetable stock
2 cups water
2 tbsp vegetarian fish sauce
chili tops
green chili
