Recipe: Yields 8 portions
1 lb ground beef
2 potatoes, cubed and roasted
1 onion, diced
Whole bulb of garlic, minced
1 carrot, diced
1 medium eggplant, minced
5 cans of your favorite beans
2 cups tomato puree or crushed tomatoes
1 cup apple cider vinegar
2 qt beef stock
2 tbsp cumin
3 tbsp coriander
2 tbsp cinnamon
3 tbsp smoked paprika
2 tbsp chili powder
2 tbsp tumeric
3 tbsp black pepper
2 bay leafs
salt to taste
Garnish
Sliced scallions and cilantro, lime, and dallops of sour cream.
