Chickpea Quesadillas
Ingredients:
1 brown onion
1 red bell pepper
250 g cooked chickpeas
2 tbsp tomato passata
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp coriander powder
Tortilla wraps
Grated hard cheese
For the avocado sauce:
1/2 avocado
2 tbsp fresh coriander
2 tbsp water
1 tbsp mayonnaise
1 tbsp olive oil
1/2 lemon juice
1/2 tsp honey or maple syrup
Salt
Pepper
Method:
1. Begin by preparing and cutting the vegetables, and mashing the chickpeas.
2. In a frying pan, sauté the onion for 3-4 minutes, then add the chopped pepper and cook for an additional 5 minutes.
3. Add the mashed chickpeas, tomato passata, and seasonings. Mix well and cook for another 3 minutes.
4. Place cheese on a tortilla, then top it with the chickpea filling. Fry on both sides until golden brown.
Serve with avocado sauce. Enjoy!
