my mole is too red


i was following a recipe and didnt realize she added a bottle of premade dona maria, should i add more chocolate to make up for it?

    Adding more chocolate will make it darker but also more bitter if you’re using good chocolate

    It will darken as it thickens up and oxidizes. The real way to make it darker is to toast your chilis longer (and other ingredients) but that’s also risky because it risks burnt and bitter flavors.

    Embrace the rojo.

    Look for mole coloradito, it has almost that reddish colour.

    Not sure how to make it but if you have to make a roux you might need to cook it longer
