Tacos Dorados de Papa

    I pretty much grew up on tacos dorado’s but they weren’t drowned in salsa like that. I once bought tacos dorados when my train stopped on the way to Mazatlan. I took them into my car and was absolutely pissed to find they were with potato rather than chicken or whatever. But they were so damn good that after that we put a sliver of potato in with the chicken. They were to die for. Most of the Mexican restaurants have no idea what tacos dorados are. Ask for tacos dorado’s and they want to bring flautas. Even when I explain what they are they can’t get their head around it. I have to make my own.

    The most important part for tacos dorados (potato, chicken or beef) is the consome.

    Put beef bones and meat with salt and pepper in water to boil.
    Once the meat is ready, remove the bones and meat.
    Add two or three tomatoes and cilantro ( if you like put some serrano chiles too) reduce the heat and wait until the tomatoes are cooked.

    Note: you can place one or.two potatos to cook too.

    Put tomatoes and cilantro (and serranos, but they normally are very hot. Be careful) in a blender with some.of the broth. Blend.

    Cut the potatoes in small cubes (same.with beef)
    Mix.beef and potatoes and add them to corn tortillas.

    Then fry your tacos dorados.

    Enjoy them with a cup of the broth (consome)
