My Mom used to make a similar dish. When we lived in the northeast, she used Italian frying peppers. Now I live in NC and they call them cubanelle peppers but they are very hard to find. They are mild and sweet. To this recipe she added a dozen eggs and a cup of grated Romano cheese. Friday, meatless dinner of potatoes, peppers and onions with eggs, served with this frittata type dish and crusty fresh Italian bread. It was my Dad’s favorite so she made sandwiches with the leftovers for his lunch at work. We also had a local family owned pizza restaurant that made subs the same way. Deliziosa! Good memories!
This is a staple breakfast dish for me – just add eggs over-easy and maybe a sausage. Lovely hearty combo to start the day.

I agree Cubanelle or frying peppers should be a choice. Sometimes bell peppers take to long to cook.
