Spicy Dan Dan Noodles Recipe (Flavours of Sichuan Cooking) Traditional Chinese Cooking

Spicy Dan Dan Noodles is a tasty Sichuan recipe for you to enjoy. My version is lighter with the fresh raw veggies. The pork is made thick to coat the noodles with mouth watering goodness.

Spicy Dan Dan Noodles (serves 2)

To make peanut sauce:

2 tablespoons peanut butter (or use sesame paste)
1 cup water
2 tablespoons sesame oil
1 teaspoon black vinegar (or use balsamic vinegar)
1 teaspoon brown sugar (or use regular sugar)
1 teaspoon light soy sauce

Preheat a pan at medium heat. Add peanut butter into the pan. Add water and simmer.
Add sesame oil, black vinegar, brown sugar and light soy sauce. Simmer until sauce is boiling

To make meat topping:

4 to 6 oz. ground pork
3 tablespoon cooking oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1/2 cup water
1 tablespoon sweet bean paste (or use hoisin sauce)
1 thai chili (or use chili sauce)
1 tablespoon light soy sauce
1/2 to 1 teaspoon salt
1 tablespoon cornstarch dissolved in 1/3 cup water

Preheat pan at medium heat. Add chopped ginger and chopper garlic.
Stir fry briefly. Add ground pork and stir fry until meat is separated.
Add water and let simmer. Add sweet bean sauce, thai chili, light soy
sauce and salt. Add cornstarch solution to thicken sauce.

To cook noodles:

2 servings dan dan noodles (or noodles of your choice)

In a pot, bring water to a boil. Add noodles and cook according to
instructions. For these dan dan noodles, the cooking time is 2 minutes.

Additional toppings:
2 to 3 tablespoons chili oil (my homemade chili oil or store bought)
1 to 2 tablespoons crushed peanuts
3 tablespoons slivered carrot
3 tablespoon slivered cucumber
3 tablespoons slivered celery

To Serve Dan Dan Noodles:

In a large bowl, put 1/2 cup of the peanut sauce at the
bottom of the bowl. Add 1 portion of noodles. Add perserved mustard greens.
Add chili oil to your liking. Add pork sauce to center of the noodles. On the side,
put the carrots, cucumber and carrots to surrond the pork sauce . Sprinkle
crushed peanuts on top of the pork. sauce. Mix noodles with chopsticks or fork.
