Dutch Oven Chili & Corn Bread

Chili recipe:
Start by browning 1 pound of hamburger and 1 white or yellow onion. Drain. Pour into a Large Dutch Oven
Add 1 can each of diced tomatoes and chili beans (not drained)
Rinse and add 1 can each of corn, black beans, light kidney beans, and dark kidney beans
Season with salt, pepper, and chili powder. I use between 1-2 Tablespoons of chili powder
After about 20 – 30 minutes, add up to 16 oz. of water. You can add more or less depending on what consistency you like the chili to be. Remember, some water will boil off as the chili cooks.
Simmer over hot coals for another 20 – 30 minutes, opening the Dutch Oven and stirring occasionally. Be careful not to get any briquette dust on the lid or in the Dutch Oven.
About 30 minutes before you want to eat, start the Corn Bread.
Before stacking the small dutch oven with corn bread on top of the chili, add about 1/2 – 1 cup of brown sugar to the chili. Stir well. Feel free to add more salt, pepper, or chili powder as well as needed.
Cook corn bread stacked on top of the dutch oven for about 15 minutes, or until a tooth pick comes out clean. Do not over cook the corn bread. The melted butter on the bottom will help make the corn bread crispy, but shouldn’t burn it. You may need to put more hot coals on top of the corn bread dutch oven to crisp up the top slightly.
Once cooked, pull the small dutch oven and coals off, and set aside to cool slightly.
Open the large Dutch Oven and allow some of the water to cook off the chili.
Serve the chili warm, over a piece of delicious, crispy corn bread.

Corn Bread Recipe:
Combine, 1 Box Jiffy Mix, 1/3 cup milk, and 1 egg. Mix thoroughly.
We did not do this during our video, but we do like to make 2 boxes at one time for left overs and add a little sugar in the mix to sweeten it up for the children. Plus, about 5 minutes towards the end, of cooking, you can sprinkle sugar on the top.
Heat the small dutch oven (you will want a lid), season with oil.
Melt about 1/2 stick butter in the bottom of the hot dutch oven. Be sure to melt, but don’t burn
Add the corn bread mix to the skillet
Stack the Corn Bread Skillet/Dutch Oven on top of the Chili Dutch Oven
