Ingredients for 4:
olive oil, as needed
2 lb raw mild Italian pork sausage
8 tbsp unsalted butter
2 small onion
4 small fennel bulbs
2 lb Egg Pappardelle
12 garlic cloves
½ cup tomato paste
4 tbsp Calabrian Chili Peppers
1 cup white wine
2 (24 oz) jar tomato purée
2 cup heavy cream
2 tbsp chopped fresh oregano
1 cup freshly grated parmesan cheese, plus more for topping
black pepper
How to cook:
00:10 Unskin the sausages
00:28 Dice the fennel
01:20 Dice the onion
01:58 Crush and finely chop the garlic
02:23 Chop the oregano
02:48 Bring salted water to boil
02:59 Add a generous amount of olive oil to a heated pan, medium heat
03:04 Add and crush the sausages
03L23 Add a pinch of salt
03:30 Cook through, about 5 minutes
03:34 Set aside, using a slotted spoon
03:54 Melt the butter
04:04 Add the onion and fennel
04:21 Cook till translucent, stirring often
04:31 Season with a good pinch of salt
04:43 Cook the pasta ‘al dente’
05:34 Add garlic and cook 30 seconds
06:03 Add tomato paste
06:35 Add Calabrian chili
07:01 Mix well
07:28 Add white wine and let it simmer for a minute or two
07:54 When ready save a cup of water and drain the pasta
08:08 Add passata to the mixture
08:40 Add heavy cream
08:56 Add oregano
09:06 Return meat
09:22 Add pasta water
09:32 Stir well
09:40 Reduce heat and simmer for 5 minutes
09:49 Add salt to taste
10:03 Mix the pasta in
10:38 Add cheese
10:54 Stir well and done!
11:06 Top with cheese and pepper. Enjoy!
