INSTANT POT WHITE CHICKEN CHILI| Easy Recipe

Hey frenns!!! I’m back again with a new instant pot recipe! This is going to be so good and perfect for this fake spring/leftover winter we are having.
Ingredients:

INGREDIENTS
* 2 tablespoons olive oil
* 1 clove of garlic
* 2-3 Thinly sliced chicken breasts
* 1 chopped green bell pepper
* 1 cup of unsalted chicken broth
* 1-2 tablespoons of ground cumin
* 1-2 tablespoons of chili powder
* 1 tablespoon of onion powder
* 1 can of cannellini beans
* 1 can of chick peas
* 1 pack of (softened) cream cheese
* 2 cans of tomatoes and green chili peppers
* 1/2 pack of ranch dressing mix
*teaspoon of ghee

Steps:
1. Place instant pot on sauté function
2. Sauté the garlic and green peppers (about 2 min) in the olive oil
3. Add the raw chicken breasts on top of the garlic and peppers
4. The flavor will come together that way
5. Season one side of the chicken breasts with cumin, chili powder, and black pepper.
6. Allow it to brown completely
7. Flip the chicken breasts. Season as you did the other side.
8. Once the chicken side is browned completely take the chicken breasts out of the instant pot
9. Scrape the bottom of the instant pot to pull up the bits (that’s the flavor)!!!
10. Add the chicken broth, cans of tomato and green chili pepper, cannelloni beans and chickpeas to the instant pot and stir. It’s ok if the sauté function is still on. Also add spoonful of ghee (this is thickening)
11. Shred or dice the chicken (I don’t like shredded chicken so I diced it)
12. Add it back into the instant pot and stir the contents together. Add ranch dressing mix.
13. If necessary add more cumin (you can taste the flavoring)
14. Place your instant pot on manual 22 min. Allow to natural release
15. Meanwhile I toasted tortillas by dividing it into quarters, spraying the flour tortilla with olive oil, and seasoning with cumin. I baked in 350 flipping each side after 3-4min (until toasted).
16. Once the instant pot is done take the top off and add the cream cheese. And stir. I did not pressurize again I kept it on the warm function for approximately 10 min (the cream cheese will melt).
17. I served with the tortilla strips and topped with avocado!
