We have been cooking this curry for quite some time and it’s our favorite comfort food. You can use any combination of beans and lentils – that’s the fun part! As we’re not going out much due to Covid-19 social distancing, we’ve been cooking with whatever is available in our pantry.
Ingredients used:
1/2 cup black beans pre-soaked overnight (or use 3/4 cup canned beans)
1/2 cup green lentils
1/2 cup red lentils
pinch of salt & 1/2 teaspoon turmeric (to boil beans and green lentils)
2 bay leaves
1 teaspoon cumin
1/3 cup chopped onion
1 teaspoon chopped ginger (forgot to mention that in video)
5 cloves of garlic
1 teaspoon cayenne pepper or paprika
1.5 teaspoon tomato paste (optional)
3/4 cup chopped tomato
water
Garnish with chopped cilantro
