Papas Con Chorizo Loaded French Fries

INGREDIENTS
5 medium gold potatoes
1/4 cup vinegar
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
2 tsp cumin
1 tsp salt and pepper
4 cups grated Oaxaca cheese
12 oz pork or beef chorizo
1 diced onion
1/4 cup chopped cilantro
FOR THE SAUCE
1/2 cup sour cream
1 cup mayonnaise
1/4 cup chipotle in adobo
1/4 cup honey
1/4 cup lime juice
1/2 cup cilantro
Salt and pepper to taste

Ask yourself this question who doesn’t love melted cheese over french fries probably people who are lactose intolerant this is my rendition of papas kizo loaded french fries wow I got Yukon Gold potatoes and this crinkle cut knife soaking them in cold water then adding vinegar and salt to a pot of boiling

Water and boiling that for about 5 minutes I use a salad spinner to get all the moisture off the potatoes and then lay them on a paper towel Lin baking tray while the potatoes dry off I’m going to cook some chizo and add some onion just for some flavor and texture

Cook that all the way through and then set that aside now what’s a loaded french fry without a sauce sour cream honey Chipotle and adobo mayonnaise lime juice and then a little bit of cilantro I’m going to cook the french fries in 375 cooking oil for 5 to 7 minutes then

I’m going to season them in chili powder onion and garlic powder a little bit of cumin and salt and pepper then I add some Waka cheese in the chizo onion mixture to a non-stick pan and place it in a hot oven just until it’s melted
