Cook this Guyanese Pepper Pot Recipe with me! Every Guyanese household must have Pepper Pot at least once a year (which is typically around the Christmas season). However, some people eat Pepper Pot more than once per year depending on the occasion. This delicious Guyanese Recipe is a family favorite, and can be eaten with either fresh homemade plait bread or with rice. My family prefer to eat Pepper Pot with fresh bread.

//INGREDIENTS//
3 lbs stew beef (lean)
2 lbs oxtail (lean)
2 tbsp salt
1 tsp black pepper
2 tbsp vegetable oil
3/4 cup cassareep
4 wiri wiri pepper (seeded & chopped)
4 tbsp brown sugar (loose)
5 sprigs thyme
3 cinnamon sticks
5 cloves
2 tsp garlic powder
2 tsp onion powder
Hot water for cooking

Hi everyone hope everybody’s doing fine and on the final stretch with all the preparations i’m about to start my pepper pot and i’m using oxtail to make it and coffee you can use any type of beef you can use pork you can use turkey to make it but
Traditionally it’s made with beef and i like to make it with um i don’t put steak or anything in it any just the ox tail and this is what the oxtail looks like and this is the cover foot now i’m going to throw these this one first in the pressure cooker
And let it cook down and then i’m going to pressure it to get it soft once i get it to what i want it to be i’m going to add it to the crock pot which i will show you in a minute and then i would do the same with this
And then i would add it to the crock pot and after then i’ve had we put hot water hot pepper thyme because this is already seasoned with thyme and a little bit of paprika and my goya seasoning and a little bit of garlic powder and that’s going to fry down and pressure
And then when i’m going to complete the pepper pot which will take a couple hours you will see the finished product when it’s finished i will add the cara drip which looks like this This is the carriage that i use they have other brands but this is the one that i use the daves it’s made in guyana with cassava it’s made from cassava and then i will add a little bit of brown sugar which i usually use this to make black cake
Which i’m not allowed to make anymore because i’m diabetic yes i’m going to cook this long until the water comes whatever water is and if i dry before i see here but sometimes you still have a little bit of water springing and then i’m going to add my
Boiled water into it and pressure it using my pressure cooker this one is like the old-time one but there are fancier ones now now mine is yesteryear i’m going to pressure it i’m trying to press it for 45 minutes 15 to the pin i test it when i think it’s
Good enough then i will throw it out into this into this crock pot then i leave that just leave it sit in there do the exterior do the same thing then add hot water and and the carrots if i showed you one more seasoning you must have
Scotch bonnet some kind of very really peppers some hot pepper because that’s what it’s called peppercorn that’s a little spicy and more thyme and cinnamon stick a few cloves and then i just leave it there on low to simmer until it’s finished a little bit of salt
No black pepper because you put in scotch bonnet peppery and then you see the finished product when i’m done see this is the cold food it’s soft this is done and i’m going to throw it all over with the sauce in there and everything into the crock pot put it over there
And then i’m going to do the same thing as i did with this cook this down pressure it and then i add it to here and since you would not be able to see how i’m adding the seasonings these are the things that i’m going to add when the meat is done
The burnt sugar the car’s rip currency piece dave’s it’s made in guyana This is the burnt sugar i put a little bit of that not too much of that and a little bit of garlic now this is supposed to be garlic but i picked up the wrong thing on my goyo as usual cinnamon cinnamon sticks cloves this is the thyme And this is the hot pepper that i’ll cut up to put in the pepper pot now the oxtail is finished and it’s ready to go into the crock pot with the cow foot let me show you that it’s finished because i tested it to make sure that it’s soft
See it’s nice and soft and i’m going to add it into the crock pot now and then i’m going to put all of the other ingredients for you to see how it’s made okay i’ve added the oxtail into the crock pot because it has been pressured and nice
And soft and ready to go i’ve already put the clothes in there and the cinnamon sticks put seven cloves and two nice pieces of cinnamon sticks because those are the flavors and whatever stock is left back in here i’m going to save it to add as we need this is the time
The pepper which i hate to touch but i have no choice time is already on the meat you have to add time Oh here’s a small another small piece of cinnamon sticker just add that in there no problem and this is a scotch bonnet pepper that if i don’t get this half of my hands properly it would not be pleasant now i’m going to add the thing that gives it the full color
This is the carrot rip and it’s made from cassava which is called yoga here Wow i see two vegetable cubes this is what this looks like wow A little bit of boring sugar that i put here helps to make it a little darker but if you put too much of that this brown sugar it will get bitter because this sugar is worn as shell but you can use it for this and even to make some different types of
Stews add it as for color but it’s basically for baking black cake now this is going to take a while to boil up because this is going to be doing this okay for you the rest of the evening you’re so weary see this is the this is the color
When it’s finished now tomorrow morning If you can see clearly i know what you can but you can see the oil on top of this color that’s from the fat so tomorrow morning after this is turned off late tonight and you get up you find all that settle on top like looking like oil
And you scoop it up in the good old days they never scoop it out because they said you’re greasing your lungs not too much wow you don’t breathe as long as these days because not dangerous so i’m going to give it a little taste to see what it has for taste
And i’m going to show a few drops of sugar in your rock not too much no not too much i’ll put a little bit of some salt i can’t eat it i want sugar you want sugar yeah you don’t want it too sweet to take away the flavor so
And this is the sugar that i use i’m use and when it boils up you’ll get the real taste and then i would add anything else that i need and it would only be salt because it has a flavor already maybe a piece a small another small piece of disgusting but
Kind of add too much at the beginning because when it boils up then you get the real taste and then you will trouble if it is too hot now it’s on low and because it is so full just i have to leave it on low yeah and that’s everything for
The pepper pot and it’s just going to cook and then you’ll see the finished product thank you very much for watching please do not forget to subscribe and like

Hello Mama, I love that pepper pot recipe. I usually put a variety of meats including pig tails. I use my mother's recipe. Thanks for sharing. Mama don't let them stop you from making your Black Cake, you can't eat a lot of it. Looking forward to seeing that Black Cake video..
