Right I me your veggies but I want to add a little bit in here so we going to do six I’m going to show you I used to cut these down but you guys should have yourself some some kitchen shears right so I’m going to go ahead and just start

Cutting these just like you see All right so now get yourself a paper plate line it with you know a napkin paper towel shake it off and you see this right here this what you want to have now you guys can do it I mean if you want to take it down even further

Than that but don’t forget it kind of like Cooks you know even though it’s drying itself out and releasing some of that bacon fat right but it’s going to get nice and crispy either way we going to goe and you know prep all of our veggies right so I’m

Roasted now I’m getting ready to come with my bacon right so I’m going to take my bacon just give it a little bit of a crumble now don’t forget I use the whole pack when you guys do my recipe you know it’s going to say like six slices it’s

Up to you you know what I mean I can’t have too much bacon right so I’m going to save some of this back now I’m getting ready to add my jalapeno remember these right here we going to dump this in here just like this now we going to give it a mix

And this right here this combination of these seasonings you know what I mean is going to give it that chilly taste now you see this right here look how thick it is you want to know how thick it is right now let me just do like this then

I’ll just stick it like this and that’ll let you know that right there this is what I call stick to your ribs and warm you up let’s just talk about taking it over the top right I’m going to slide this over into the face right here so

For those of you guys that have trusted me we went with the cinnamon right you see that just a little bit of this in here like this you know what we just going to put about a teaspoon in there it’s all you need cuz we came with the you know the

Cocoa powder right so now we going to get this a mix you see this right here this got W sauce got to have that all right so we going to put about a tablespoon of this inside we come with our broth just a little bit at a

Time it’s going to cook down so look it might look a little watery to you guys once we get it all in here so we always talk about tasting right so we want this to be right so I’m going to goad and give this two generous pinches of

Salt this is a big pot of chili folks it’s going to take it then when it come to this right here you know I can just tell you listen we just going to turn until our elbow get tired and our wrist get tired everything is right I done ran my

Spatula across the bottom the top and the sides I’m going go ahead and put this lid on but look I’mma to leave this L lid and I’m going leave it vented you can cook this for a minimum of 45 minutes right if you got the time do it

All day you know what I mean this should take 3 hours though for sure 3 to 4 hours but after 45 minutes I’m just saying nice and slow and watch what happen and you know what this is like spaghetti folks folks it’s always better the next day I’ll see y’all in 45 okay

Right now listen if you guys going to plan on cooking it all day I would just ask you to reserve a little bit of your broth back or have some extra broth so like if it thickens up too much or cooks too much you know what I mean it gets

Real real thick you want to add something to it that’s all you got to do but you see this right here this is fire that you can smell it your whole house should just be full of like that chili Aroma you know what I’m not going to

Over talk it I’m going to just go ahead put some in this bowl and then we going to taste it here it is right here listen I’m not going to over talking I’m going to get right into this I got to taste this folks you know with all of the dressings

  2. I've put baking cocoa in my chili before, does not make it taste like chocolate, but adds a richness and a bitterness that are very pleasant. It's a great secret ingredient! I generally stick with black beans, but it's all good that way. I like to take whole coriander and comino (cumin) seed and toast them in a dry pan, then grind them up. Brings super flavors and aromas. If I feel crazy I'll use whole fresh Roma tomatoes, but that's a lot of prep work. Worth it though. For peppers I like a variety for flavor, bell, ancho, poblano, jalapeno and I usually slip one habanero in for some good heat without making it too hot. I'll vary it up, depending on what I can find at the store. Hatch chiles are always good to have as are chipotles for that fabulous sweet smokiness. Finally for meats I love a venison chile. I have some in my freezer now from a friend. I'll mix that with some beef and some Mexican chorizo, and of course a healthy quantity of bacon. Top it with scallions, cheese, sour cream and fresh cilantro. Yum!

  4. I discovered the cinnamon trick by accident years ago (grabbed the wrong container from cabinet). Never thought about trying cocoa powder. I'll be trying that next week then.

  5. I’ve made chili like this a couple of times, mostly during football season. The first time I used the exact amount that the recipe called for, but the next few times I used less than the amount that the recipe called for. It’s more of a Cincinnati style chili recipe. It’s good if you like that flavor of chili.

  6. First off, that dish pictured is Chili with beans. Chili does not have beans or tomatoes in it. Nothing but Chilies and meat. I may have to try this.

  10. Tried this recipe today and I made one modification. Instead of using tomato paste I used BBQ sauce. I have bad acid reflux so I can't eat anything too tomato based. The whole pot was gone in an hr.
