
I made some enchiladas verdes for lunch today because I love them. These pics were before I added a few thin slices of avocado on top. I mostly followed [Pati Jinich recipe](https://patijinich.com/es/enchiladas-verdes/) but just as a slight guide as I know how to make them. This was my first time not putting cheese inside (just poached and pulled chicken) and I have to say, it tasted simpler and better. I also quickly fried the corn tortillas and did not want more fat from the cheese. I didn’t bake them at all since I live in Mexico and did not want to heat up the house with the oven. Her recipe is simple and delicious (I think she has it in English too).
