This is the first video I’ve done of this sort and I doubt I’ll do one similar to it anytime soon, but I’ve made this recipe three times since quarantine started and my family and I never seem to get sick of it!
CHOCOLATE CHILI – Serves 6
2 lbs ground beef
2 medium yellow onions, diced
3-6 cloves of garlic, minced or crushed
1 tsp dried oregano
1 tsp ground allspice
1 tsp harissa
2 tbsp cumin
2 tbsp chili powder
1.5 tbsp unsweetened cocoa powder
Salt, to taste
3 cups chicken stock
One 6oz can of tomato paste
One 14oz can of fire-roasted crushed tomatoes
Avocado (or other neutral) oil for sautéing
Heat large, deep pot on medium-high heat. Sauté onions until slightly softened and translucent. Add garlic and ground beef, stirring aggressively with a wooden spoon to chop it into smaller pieces as it cooks. Let the water from the beef boil off and let the beef, onions, and garlic fry in the rendered beef fat. When the bottom of the pan looks close to burning, add spices. Stir well, then add tomato paste and stir well again. Add the crushed tomatoes and chicken stock, bring to a boil and then reduce the heat. Simmer uncovered for at least two hours.
