Chili Recipe
INGREDIENTS:
• Olive Oil: ¼ cup
• Vegetables: A mix of bell pepper, onion and garlic.
• Chile peppers: One jalapeño (or two, if you prefer) to give the chili some heat.
• Seasonings: A blend of chili powder, smoked paprika, cumin, garlic powder, coriander, 2 bay leaves + salt and pepper.
• Ground beef: I used a leaner cut of organic ground beef, but any type of ground beef will do.
• Tomato Paste: ¼ cup
• Coffee + beef stock: I add a little dark brewed coffee in with beef broth or you could add a half bottle of beer
• Canned chopped tomatoes: or you can use a chopped fire roasted tomatoes if you want a little more
• Beans: one can of black beans or whichever type(s) of beans you prefer, rinsed and drained.
• Toppings: Grated cheddar, sour cream + tortilla chips. You could also use chopped scallion, cilantro, chopped onion, diced avocado
INSTRUCTIONS:
1. Sautee onions, peppers, garlic + jalapeno in olive oil until soft
2. Add seasonings to vegetables and cook for a minute
3. Add ground beef to vegetables + seasonings and brown
4. Add tomato paste
5. Add coffee, beef broth, canned tomatoes + beans
6. Cook on low for 1.5 – 2 hours
7. Top how you like and its ready to eat
