Hello this is Chef John from foodwishes.com with chili cheese bean dip that’s right I’m going to show you what I think is the best bean dip and the easiest bean dip right there’s no sautĆ©ing there’s no baking and there is certainly no layering oh yeah you can keep your seven

Layer dip I prefer this one layer dip and to get started we’ll take one can of reff fried beans and we’ll transfer it into a mixing bowl and please try to use something nice right I’m not going to tell you the exact brand but the name is

Very close to a famous Bruce Springsteen song and then besides the beans we’re also going to want to add some cheese and I’m using two kinds I’m going to go with some pepper jack as well as some nice sharp cheddar and while the white cheddar will definitely work here I do

Prefer the orange cuz it’s going to give our final dip a much nicer warmer color and as usual I must insist you grate that yourself or better yet have one of the kids do it right that is just good parenting and then after the the cheese

I’m going to add which a little bit of a secret ingredient and that’s a couple tablespoons of avocado oil although a nice buttery olive oil would do the same thing and that’s going to add some richness and make our dip a little more unx and then we’ll follow that up with a

Little bit of sour cream or of course some Mexican Crema and then we’re also going to want to add some finely minced garlic some finely and freshly sliced green onions as well as some freshly chopped cilantro oh and please listen to me now and hear me later is I tell you if

You’re going to make this the day before you should probably add these ingredients the next day and that’s because if you add this now and then it sits for like 24 hours that garlic and onion flavor can intensify and possibly overpower things so please be careful

But anyway we’ll also want to squeeze in the juice from one lime or more if you want a Tangier I mean it’s your dip and then we’ll follow that with a very lime friendly spice which is ground cumin which will bring us up to the chili

Portion of of the program and we’ll do some fresh and dry starting with some ground Chipotle as well as some ground ancho or just that stuff that says chili powder in your pantry that’s also going to work and is probably ancho and then for a little bit of fresh chili we’ll do some

Finely diced up jalapeno and then because we added Chipotle this does not need Cayenne but we’re going to add a little bit anyway and that’s it we will simply take a spatula and give this a mix until we’re sure everything’s been perfectly combined and know we probably don’t need any salt

Right there’s a decent amount in the cheese but mostly because the can of refried beans is generally well seasoned oh and that reminds me you don’t have to use reff fried beans you can just mash up a can of pinto beans in which case you probably will need some salt so if

You’d rather do that go ahead I mean you guys after all the machines of how to do the beans but using the refried is convenient and I think works out really nicely and that’s it once has been thoroughly and thoughtfully spatulated we will give it a quick taste just in

Case it needs a little something at which point we can serve it immediately but I like to wrap this and pop it in the fridge for a few hours until it’s nice and chilled although that is optional but either way once we’re ready to eat we’ll go ahead and transfer that

Into something nice or you could also use a wooden bowl like this and we’ll serve that next to some corn chips or the crispy delivery system of your choice and then for a final touch I like to do a little scattering of red and green pepper plus a little bit of finely

Sliced green onion and that’s it our chili cheese bean dip is ready to enjoy so let me go ahead and grab a chip and dip in and that my friends for something that require no cooking and very little work is a very satisfying and Incredibly delicious bean dip and yes it is a

Little bit spicy but you can tone that down if you want and I think there’s a great balance here between between the Heat and the richness and the acidity from lime and the sour cream plus of course that savoriness from the cheese so to summarize what this dip lacks in

Layers it more than makes up for in every other way and besides what I think is the perfect flavor for a bean dip I also think the texture here is ideal all right we have something that’s thick and dense and satisfying but as you can see

It’s not so firm that it breaks our chips right there’s an old saying I just made up if you break a chip in a dip it’s not a dip for chips so in that regard I thought this was perfect and besides enjoying the amazing taste and

Texture as I was eating these I was getting a little bit nostalgic since there was a time long ago when I was totally broke and I basically lived on canned bean dip and tortilla chips and you’re probably thinking man I hope you lived alone well no I didn’t I had

Roommates but anyway the point is I’ve always had a soft spot in my heart for bean dip which makes makes sense since according to that old song beans are good for the heart but anyway that’s it what we’re calling chili cheese bean dip if you need something super easy and

Super cheap but still absolutely fabulous to bring to or serve it a party and you are not concerned with how many layers it has this is going to be the bean dip for you which is why I really do hope you give this a try soon so

Please follow the links below for the ingredient amounts a printable written being much more info as usual and as always enjoy

  1. As we had an open campus in high school, meaning we could leave campus for lunch, it wasn’t uncommon too see more than one person go too the grocery store across the the street and buy a bag of the taco flavored Doritos , a can of bean dip , and the soda of their choice šŸ˜‚

  2. Any chance you can do chicken wings to predict the winner of the Super Bowl this year? I miss those vids. I gotta get my bets placed soon, too! šŸ˜‰ lol Great vid! Thank You!

  3. This is amazing warm, cook on the stove top till it’s hot with all ingredients except the green onions and cilantro which you mix in once ready to serve. This cold per Chef John works excellent if you want to elevate your layered dips.

  4. The Springsteen reference got a lot of good comments…LOL! The only thing missing in this presentation is a frosty skein of beer.

  5. prior, your grated cheese has always been curly.
asking bc (nk) I've long admired/coveted the cutey cheese curls.
(seriously, I'm totally not kidding. what grater did you used to use to get the curly cheese?
asking bc I like cute food – and curly cheese is much cuter than straight.)

trader joe's sells pasta that's basically bucatini curled like a telephone cord … which I love bc it's adorable.

  6. I do something similar to this, but I prepare and serve it hot, which I feel is better both texture and flavor-wise.

also, black beans for tastier results!

  7. hmm.. no.
i make an actual chili.. then melt the cheese into the chili, and stir in the refried beans..
    i like-a-mine better
