*INGREDIENTS*
1 lb lean ground beef
1 envelope of chili seasoning mix
1 can Rotel chiles and tomatoes (drained)
1 can of pinto beans (drained)
1 Tbsp tomato paste
1 Tbsp chopped chipotle pepper in adobo sauce (optional)
1 to 1 1/4 cups beef broth

Okay, let me be real. I could probably be lazy every single day because most of us are overworked underpaid lack sleep and some of us probably suffer from anxiety and depression so cooking some elaborate meal for dinner breakfast or lunch is just not what it’s cracked up to be so I’m going
To show you the laziest quickest way I like to make chili I’m also going to show you some things I cook when I just don’t want to cook so here we go okay so I’m going to start by getting my pound
Of lean ground beef this is like an 8515 Ratio or 837 meat to Fat ratio and this is how I thought it it’s frozen I add you could do cold water but I kind of do like room temperature to warm and I
Just place it in this bowl fill it up you want to submerge it and then just set it on the counter for a couple of hours until you can kind of like squish it and it’s kind of thawed this is still
Really cold but it’s a lot easier to work with okay so the ingredients store-bought chili spice mix I’m going to be using dehydrated minced onion pinto beans a can of Rotel a cup of beef broth I’m also using a tablespoon of tomato paste and chopped chiple peppers and Adoba sauuce my ground
Beef and a little bit of cooking oil I am going to add maybe a tablespoon into the pan with my thawed ground beef actually like I said it’s kind of cold if you have it completely thawed with no chill on
It this really cooks a lot quicker so I’m going to tear open this package and sprinkle it all over the ground beef here I’m adding my dehydrated minced onion you could add fresh but I love just dehydrated onion in this okay move it around break it apart you want to Brown really well
And let me show you this little chunk is still frozen so just work that and let it Tha okay tomato paste and chopped cheap whet peppers and other oil sauce if you do not want to add spice
To this then omit the Chaple pepp Peppers okay mix that in and I kind of want a crust to build at the bottom just like this now you don’t want it to burn but I’m going to try to work quick because
This is a quick lazy chili so now I’m going to add my beef broth I added a cup of warm water and a teaspoon and a half of beef bullion powder to this okay so just move it around get everything
Combined and now I’m going to start scraping up the fond oh Rotel going in and I drained that can pan by the way so again you want to mix this and start picking up the fond at the bottom
Of the pan that is Flavor that is great flavor for a quick meal by the way so as you can see I did a really good job scraping up the fond so I’m adding my drained rinsed can of pinto beans and I
Like to push that in so I don’t cut myself later okay so give this a really good mix it’s already simmering so what I’m going to do is combine well and I think I want to add a little more
Water so I’m I’m just going to use this little bowl that I had the tomato paste and peppers in and just add maybe like 1/4 cup of water again combine that well and it’s already simmering so
All I’m going to do is just place the lid over my pan and let it simmer for an additional 5 to 10 minutes and then it’s done and that’s the lazy quick chili that anyone can make you can also
Double this recipe and meal prep it for later use it’s really good when you’re feeling lazy and you need to get dinner quick so let me show you the other things I do when I don’t want to cook for lunch today I am going to be making just a store-bought salad with
Store-bought seasoned salmon and this is kind of like this pack is kind of weird to open here we go so this is already seasoned it’s like like a citrus dill salmon and all I’m going to do it’s thaw is place it into my Air fryer here we go
Okay going into my Air fryer let’s see I’ll do temp 380 I’ll start it for 5 minutes and then see if it’s done if not I’ll take it a little longer but it doesn’t take that long for the salad I am using just a store-bought baby spinach
Green salad with like a vinegarette um let’s see open it this way and like I said this is just something I do when I don’t want to cook that’s the theme of this video just quick and easy things that I can make or cook or put together with store-bought ingredients and actually put
My Bowl here and I’m just going to dump the salad in there we go so good there we go and not all of it that you can add extra garnishes if you like this has like blue cheese and pecan I’ll go in with some cracked black pepper
And I’m going to separate this salad into two bowls carefully so one salad I think serves two people well with salmon on top there we go perfect so this is almost done let’s see oh yeah it is done perfect so it’ll take about
This was completely thawed and pre-seasoned so you know somewhere oops somewhere between like 5 to seven minutes in the air fryer at 380 works and I know it’s still hot but I’m okay with wilted spinach and some of my salad you might want to wait till it cools but boom
There’s lunch this is for my husband and I and my kids they typically like to make a sun butter and jelly sandwich and call it a day but yep so here’s lunch super easy and this is lunch
When I don’t want to cook next up is an easy pasta idea when the pasta takes 3 minutes to boil and the sauce is already made here I have boiling water I’m going to add some salt vodka sauce and I want to go ahead and start warming this up put that in
There okay I’m going to put this is one pound of porcini mushroom tortellini into my boiling water and it’s only going to take 3 to four minutes to cook and this is already simmering I have it at a low heat
Okay so this is pretty much done I’m going to take this out and put it right into my simmering sauce oh okay got to turn this water off there we go so I’m just going to stir this and actually,
I’m going to shut the heat off because everything’s done I’m going to get some Parmesan cheese sprinkle that right on top some fresh parsley there we go and that’s tortellini and a store-bought pasta sauce and that’s lunch an easy lunch or dinner so
Good now I know this breakfast one is last but this is my favorite easiest breakfast to make it’s toast with a cup of tea so I love a good cup of tea with crusty toast with butter and my favorite jam or

I make rustic sourdough bread and freeze it, so I grab a slice and toast it. Lemon curd on toast is a nice treat. Growing up, we had salmon wiggle on toast. Canned salmon added to a béchamel sauce with green peas thrown in. Other times we had dried beef, hard boiled eggs cut up and thrown in, with another bechamel sauce on toast. Other times we'd eat our favorite boxed cereal with toast. It was grape jelly only as a choice. Many times we just ate peanut butter and jelly. Whatever works! 😀

They were helpful but a lot of sodium. I use the same McCormack chili seasoning only the low sodium and Buch's Chili beans in sauce along with no salt cans of tomatoes and Better than Bouillon Chili. Smokey Chipolte, Adobo sauces one to two teaspoons each it's just as easy as yours. My breakfast is Crusty Rye Toast with Tea or Coffee and one hard boiled egg. I ner eat lunch and what you do is kind of expensive for me. But I like the ideas.
Looks good and pretty much how I make chili beans in a hurry. One thing I never do is drain Rotel. That liquid is full of flavor 😊

Yes, I use 2 packs of Ole El Paso taco seasoning mix when I make my chili and I thought it was my sneaky secret🤣I usually make a little over 2lbs of extra lean beef when I make this. Nothing wrong with a little cheat that tastes amazing! I also find that it is cost effective with the packets vs. buying all the spices.)
