Ingredients for 1 loaf
235 ml water
65 g starter
7 g salt
325 g bread flour
Filling:
10 g pink pepper
Cooking technology:
Add water, starter and salt. You need to mix everything and then add flour.
1. Knead the dough. Approximately 12 minutes.
The dough should be left to rest for one hour. Cover the bowl with cling film or a towel.
2. After this, you need to thoroughly knead the dough again, round it and leave it to cook again for 45 minutes. Cover the bowl of dough each time.
3. Sprinkle peppercorns on the dough as shown in the video and gradually fold the dough with wet hands.
4. Cover the bowl with a towel and leave to cook for 45 minutes.
5. Fold the dough again with wet hands and leave to rest for 45 minutes.
6. Sprinkle the table with flour and place the dough on it.
7. Form the dough as shown in the video.
8. Place the bread in the basket, sprinkle with flour, cover the basket with film or a towel and leave in the refrigerator for 10-12 hours.
9. Next day, remove the pieces from the refrigerator, place them on baking paper and bake for 15 minutes in a cast iron skillet or on a stone at a temperature of 445F/230С with steam. (place boiling water on the bottom of the oven). After lower the temperature to 420F/215С and bake for another 20 minutes.
10. Remove the bread from the oven and enjoy your delicious bread!
