Crunchy Pepper Thattai recipe by Chef Sunder | Recipecheckr | Milagu Thattai



This video explains how to make Pepper Thattai at home. Today I’m going to prepare this snacks item which is also my favourite. Thattai Murukku has lots of Varieties and we have done one version too. Now, this is a special variety is Pepper Thattai. For this, the ratio is important because the final Milagu Thattai needs to be thick and crunchy. So we will see how to make a perfect healthy pepper Thattai.
Let’s see how to make this.

Here are the ingredients for Milagu Thattai
Urad dhal – 40 gms
Rice flour – 500 gms
Jeera – 10 gms
Pepper 60 gms
Asafoetida – 20 gms
White sesame seed – 2 Teaspoon
Vanaspathy – 60 gms
Soaked urad dal – 75 gms
Soaked moong dal – 75 gms
Butter – 20 gms
Salt to taste

Hello everyone, Welcome to Recipecheckr Today I’m going to prepare a snacks item which is also my favourite. Thattai Murukku has lot’s of Varieties. And a special variety is Pepper Thattai. The ratio is important because it needs to be thick and crunchy So we will see how to make a perfect healthy pepper thattai.

So it’s a healthy snacks too. and it’ll be like the one from your favourite sweet shop. Let’s see how to make this. I’m going to cook it with mantra groundnut oil. Let’s see the ingredients. The base which is rice flour and urad dal flour is very important.

You need to add 1:5 ratio of urad dal flour and rice flour. In the first stage, we’ll saute and grind the urad dal. And we will use some soaked ingredients too. so please watch carefully. And the cooking process is very important. Let’s see how to saute the urad dal.

We have taken half of the taken urad dal to saute. the other half amount is soaked. so the sauteed urad dal need to be powdered. you need to saute until it gets mild red colour and that will give a good flavour. Now it’s in mild brown colour and it’s giving a good aroma.

Now take it out and leave it some time. then make it as a fine powder. Now the powder is ready and we’ll add rice flour to it. you can see the fine powder made from the sauteed urad dal. So we’ll add this with rice flour. Before that, take a pan.

And heat the oil. I’m using Mantra groundnut oil for deep frying. Take a bowl and add the urad dal flour that we prepared And rice flour. We have soaked half the portion of urad dal in water. And the other half portion is added here as powder. Add the needed amount of salt.

Add the butter. And then Vanaspathi. If you want trans fat free dough, you can use butter only. But vanaspathi will give a good crunchiness. In a commercial recipe, people will mix both. Butter is for add on flavour. If you remember, in our biscuit recipes, We’ll mix until the crumbs come.

Now it’s in a consistency of bread crumbs. Let’s add other ingredients. Add the Asafoetida. And 1 1/2 teaspoon of white sesame seeds. And then pepper. We made a coarse grind of pepper and adding it. Also we can call it as crust pepper. Add the jeera.

Now this is the time to add the soaked(3 hrs) urad dal Now add it. And add the soaked moong dal. This is also soaked for 3 hrs. The soaking will give a softness. Now we have added all the ingredients. ow oil is heaten and its getting ready.

We need to add water and make it as a tight dough. And then we’ll make thattai. Add the water carefully. The dough needs to be a bit tight. Make sure you get this much tight consistency as shown in the screen. I’m just using the rolling pin.

And I’m using butter sheet in the top and bottom for an even thickness. If you have chapati press, you can use it. It’ll be an easy method too. You can use any sheet for this. Also yo can use chapati press. because of rolling pin, I’m using this sheet.

I’m adding a drop of oil. take the dough that we prepared. Place another sheet in the top. Then roll the dough to a even thickness. Now it’s in a even thickness. Use any cutter you have. Because of dal, you need to press hard to cut properly. Now it’s in round shape.

Let’s do the same process for the rest of the dough. In a medium heat oil, Add them one by one and let it fry deeply. Now the thattai is ready in a nice brown color. When you take it out, you can see the crunchiness and hardness.

In pepper thattai, the soaked urad dal will give a nice flavour. Pepper thattai is a unique one. It’s a very tasty and punchy one. So you have seen ow to make a Thattai Murukku. If you like this video, share it with your friends.
