Recipe SAMBAL GORENG ATI AMPELA PETAI – one of the favorite Indonesian chili dishes

Sambal Goreng Ati Ampela Petai is one of the very popular chili dishes (sambal) in Indonesia. Especially the presence of these petai (stink beans) that most of them get addicted.

Petai are called stink beans for reason. They stink literally everything from the time the beans enter your mouth and you chew it all the way to your waste products.

Just like with asparagus. The process is so quick that your urine can develop the distinctive smell within 15 to 30 minutes of eating petai.

Ingredients:

500 grams of potatoes
300 grams of chicken gizzard
300 grams of chicken liver
100 grams of petai (stink beans)
red chili peppers (at will)
1 tomato
2 teaspoons of tamarind paste
1 onion or red onion (or some cloves of shallot)
3 garlic cloves
3 candlenuts
1-2 cm of galangal
1-2 cm of ginger
1 bay leaf
3 kaffir lime leaves
1 stalk of lemongrass
1 teaspoon of salt
1 tablespoon of grated palm sugar
200-250 ml of coconut milk
cooking oil (for deep-frying)
