Ingredients📝:

– 1.5 cup vegetable oil.
– 5 star anise.
– 1 tbsp Szechuan peppercorns.
– 30 grams red chilli flakes.
– 15 grams fried shallots.
– 15 grams fried garlic pieces.
– 8 grams sesame seeds.
– 2 tbsp chicken stock powder.
– 1.5 tbsp salt.
– 1 tbsp white sugar.

Method 👨‍🍳:
1. Heat star anise, peppercorns, and vegetable oil in a small saucepan over low heat for 10-15 minutes. Ensure the oil is bubbling lightly without burning the aromatics. NOTE: If they do begin blackening, remove them, and let the oil continue to heat on low.
2. Assemble all other ingredients in a large metal bowl and place it on a heat mat.
3. Remove the infused oil from heat. Then strain it with a fine sieve into the metal bowl and discard the aromatics. Mix everything together using a metal spoon.
4. Taste test the oil using plain toast and adjust seasoning as needed.
5. Transfer the cooled oil to a storage container.
