Wildfire Chili…a good WFF meal for sure

Cold weather makes you want some warmin’ up stick to your ribs chili…heres my “off the grid” recipe…chili cant be beat as a quick nutritious meal…wildland fire fighters, hunters,ranchers…and anyone else that works hard outside…heck… it would even be good as a meal for the football game!

This recipe can also be “con carne”,just add a pound of browned burger…preferably elk or venison…its also a great recipe to can…but if you put in the meat make sure you use a pressure cooker to get it to 150 degrees…otherwise the regular method of 45 minutes,then put on the lids is perfect.

A Dutch oven,good deep fire pit lined on all sides and bottom with stone(this really holds in The heat)…its about a 3 to 4 hour project…a heaping fire in the pit will provide enough heat to cook to a boil, then simmer in all the Ingredients for a few hours…when I can touch the Dutch oven lid,its done…a good stir every 15 minutes or so guarantees the flavor and ingredients are are mixed in real nice…

Some like their chili hotter than my wife and i… you know how many peppers of whatever kind you can handle…this pot full would be considered, with the chili powder,cholula sauce and jalepenos medium hot I guess…

Wildfire season is pretty much over…at least we hope so..we had a foot of snow two nights ago….this weekend is the first time I’ve used the pit in a while,since monsoons at least…the cornbread recipe I put up yesterday is a perfect match for this chili…that’s why I did it!

Wildfire Chili

2 cans of red kidney beans
2 cans of chili beans
1 can of black beans
1 large sweet or yellow onion
1&1/2 ounces of chili powder
1 tablespoon of coarse black pepper
2 teaspoons of sea salt
2 table spoons of cholula hot sauce (or similar)
3 large jalepeno peppers (no seeds)
And most important…a couple of good friends to help you eat it all!

The slow cook process really blends all the beans together nice…cast iron is for sure the way to go! Letting it simmer til it cools down on it’s own is the real secret..and it gets better every time you warm it up….
