Quinoa Chili
Ingredients
1 cup uncooked quinoa (I used a tricolor blend but any will do)
2 cups water for quinoa or 2 cups of either beef/chicken/vegetable broth (for added flavor)
2 Tablespoons olive or less if using a non stick pan
1 Tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
¼ teaspoon ground cayenne pepper
1 teaspoon kosher salt
¼ teaspoon fresh ground pepper
2 Tablespoons fresh chopped parsley or cilantro
½ cup diced onion
1 cup canned diced tomatoes
1 cup black beans from can
1 diced roasted pepper (optional)
1 cup water
Directions
Cook quinoa according to package directions which is usually 1 cup quinoa and 2 cups liquid in a pot. Simmer together for 10 minutes or so covered. Set aside and it will absorb the remaining liquid (check package for exact directions.
In a large pan heat up olive oil. Add onions and sauté until soft about 3 minutes. Add tomatoes, 1 cup water and all spices. Bring to a simmer and add black beans (roasted peppers if you like) and parsley. Stir for 2 minutes and add quinoa and mix well. If at any point you feel like it is too dry add a little more water. I served mine topped with shredded cheese and a fried egg. Enjoy!!!!
