怐Ingredients怑
Chicken thighs 2 pcs
Ginger 3 slices
Chinese green onions 2 stalk
Chinese cooking wine 2 tbsp
Salt 2 tsp
Green peppercorn 4-6 pcs
[ Sauce ]
Chicken broth 1 tsp
Chili oil 2 ladles
Soy sauce 2 tsp
Chinese black vinegar 1/4 tsp
Peanut sauce 1/2 tsp
Sugar 1/2 tsp
Salt 1/4 tsp
Green peppercorn 4-6 pcs
Bird eye chili 2 pcs
Peeled garlic 20 g
Peeled ginger 15 g

怐Steps怑
1. Color the chicken thigh with gardenia powder (or ground turmeric).
2. Peel the ginger and garlic cloves. Flatten the ginger with knife. Section the Chinese green onions and bird eye chili. Chop some scallions for garnishing.
3. In a pot of cold water (1.2 L), add 2 tbsp Chinese cooking wine, 2 tsp of salt, a few green peppercorns, flattened ginger, green onion sections and chicken thighs, and bring to a boil. Then, cover the pot with lid and continue to cook the chicken in the residual heat for 12 minutes.
4. Prepare a bowl of ice bath. Remove the cooked chicken to the ice bath and chill.
5. While chilling the chicken, prepare the sauce. In a mortar, add 15 g peeled ginger, 20 g garlic, 2 bird eye chili, 4-6 green peppercorn, and grind into a pasty texture.
6. In a mixing bowl, add the ginger chili paste with 1/4 tsp salt, 1/2 tsp sugar, 1/4 tsp vinegar, 1/2 tsp peanut sauce, 1 tsp chicken broth, 2 tsp soy sauce and chili oil to your preferred amount, and mix everything well.
7. Cut the chicken thighs into thin slices. Pour the sauce over the chicken, and garnish with choppedĀ scallions.

  1. Hi, I'm new to cooking. May I ask, if there is any difference in pounding the chilli vs blending or using those Amazon mechanised choppers.
