hello and welcome back to my channel I am back with another 30 minute meal and this time I thought I will cover a rice dish because I’ve done some dll subzi I’m trying to cover all areas of Indian food in this 30 minute Series so I’m going to make a delicious pepper chickp coriander Pula and you can find lots more 30 minute meals in my book 30 minute Indian you can check it out the links in the description let’s get oh don’t don’t forget to subscribe guys that’s the most important and also click the notification button because then you will get a notification every time I share a new recipe which is at least three times a week it this does not need many ingredients at all as most of my recipes so hopefully you’ll be able to make this at home very soon so I am going to start with one mediumsized onion you can use one mediumsized onion but I have got lots of shell Lots at home so I’m going to use instead of one onion I’m going to use a hand full of shalots you can even use one medium Red Onion if you want and uh because these are shots I’m literally going to peel them and cut them into fours I love shalots but peeling them is such a like a it does take a little bit of love to peel um these little oh look the sun’s out on Q must have realized that I’m making a video so the sun’s come out well hello sunshine so I’ve chopped up the shalots I’ve also just turned the pan on to get it nice and hot ready for the shalots or onions if you’re using that nice hot pan and two to 3 tbspoon of oil of your choice sunflower grape seed whatever you like and now I’m going to add a teaspoon of cumin seeds let them Sizzle and in going to add a couple of bay leaves [Music] just a few seconds here before I add the shots I just want them to soften so I will give it a total of maybe 6 minutes and in that time I’m not going to waste that time obviously I am going to chop up some uh pepper so I have got two peppers I just use a Slither for something but basically you need two peppers and some garlic to begin with so a good 3 to four cloves of garlic just going to slice it thinly and I’m going to chop the peppers into chunks you could use a mix of yellow green red peppers though for this rice red works perfectly fine in goes the garlic just give it a [Music] minute so the peppers have gone in here is a tin of chickpeas just drained and uh rinsed quick mix now time for some spices teaspoon of salt teaspoon of turmeric teaspoon of chili teaspoon of chart Masala you can find the recipe for chat Masala on the channel it’s just a lovely like a mix spice mix I’m just going to give it a minute in the mean time I’m just going to quickly wash the rice so I’m using some basmati rice and I have got 300 G because I’m cooking for four and then if there’s any left over it’s great for next day’s lunch box just wash like this three or four times you will never get completely clear water but two three times does help just make sure you have got rid of uh almost all the water and this goes in the pan and before you add the boiling water get the kettle on in time just mix it first very gently without breaking the rice look at that looks so gorgeous already all right I’m going to get some water okay now here I have got 600 mL of boiling water I’m going to get the heat to medium pour the water just getting every last bit out give it a nice mix to cook on very high heat this needs to be cooked nicely on medium heat and then I’m going to cover and put a timer for 15 minutes okay sorry I am feeling a bit run down I have been filming quite a lot I’m working on a new series at the moment which is taking me out of the kitchen I cannot wait to share that with you starts on Sunday so don’t forget to sub subscribe and hit the notification button because you don’t want to miss it anyways I’m quite rundown I need to sit and do nothing for a day um anyways back to the rice so this is cooking on medium heat for 15 minutes I know you could see a lot of peppers because I like a lot of vegetable in it so if you want more rice you can put one pepper instead of two if you want more chickpeas you could put one pepper and two tins of chickp so you kind of make it your own so while that is happening for 15 minutes I can give the kitchen a good clean up and get some herbs uh as in coriander ready for when the rice is ready and maybe have a cup of coffee so it has been 15 minutes I am going to turn the hob off and now just leave it to sit for however long you have so if you’re going to eat it straight away leave it for 5 minutes if you have a got a bit more time then leave it for 15 minutes it’s quite funny because when my mom made a palow video for the channel she didn’t have any such rules of letting it sit she actually I’m like so strict don’t open it don’t open it for 15 minutes whereas she kept opening for every 2 3 minutes so in a sense what I learned uh from her this time was that it doesn’t matter but then I’m so I like to cook this way so yeah Just Give It 2 minutes before you open the lid is what I was trying to say so this actually I I got a call and I had to leave this aside so it’s been sitting like this for half an hour doesn’t mean anything but I’m just telling you being honest it won’t be as smokey as it should have been half an hour ago anyways let’s let me show you how this looks [Music] now and it would be best if when you open the lid then if you use a fork then you can see how flaky and gorgeous and not sticky this rice is every grain is separate and that how perfectly it is cooked don’t worry I’ll pick that Rice up this is what happens when you film with one hand doesn’t that look just so stunning so gorgeous so inviting absolutely [Music] beautiful right guys that is all it’s took exactly 30 minutes if you count 5 minutes of rest I must add to get this lovely delicious pepper chickp rice ready so lovely so nice you can add some Shives or some till it’s summer time there’s so many different herbs about a bit of mint if you like whatever you want parsley girly parsley flyf parsley go mad whatever you do have it with a bit of yogurt and enjoy this is great for picnics because it keeps really well so you can take it warm you can take it at room temperature it’ll taste delicious whatever is left back in your lunch box God so many ways to eat this whatever you do enjoy it and come back for another For easy peel shallots, just cover with boiling water for 3 to 5 minutes then peel away.
If you smash the shallots like a garlic the paper will come off easier and/or cutting off the bottom (like you do with garlic) then smashing with the paper on.
Being honest is the best. Never apologize for being honest. Honesty is a good thing.
This looks really really good!!!!! I'm going to convert it to an Instant Pot recipe! I'll saute the veggies and spices in the IP and then just cook the rice using my rice method. 3 minutes pressure cooking followed by a 10-minute NPR. I did this on your Ultimate Cumin Rice recipe and it worked beautifully! I'm sure this will be amazing too! With humblest apologies I'll add some diced cooked chicken after pressure cooking and use BTB chicken broth instead of water. Love your channel and recipes and wish you could come over to the states for a book tour! I'd love to say thank you very much in person!!!! 😀
