Just an introduction and a hello from a budding Pitmaster from the UK. Also a recipe for my “Losers Chilli”, named because the key ingredient is trimmings and offcuts from previous cooks. Don’t be shy with your local butcher! I’m sure they will be happy to mince your beef down if you ask nicely!

Losers Chili Recipe (8 portions):
1.5kg Beef Mince
Salt and pepper (to taste)
100g Ghee or Cooking Oil
2 large white Onions
200g Chilli Peppers (leave the seeds in, come on….)
2 Bell Peppers
10 Tomatoes
1 Bulb Garlic
50g Chipotle Paste
100g Tomato Paste
20g whole Cumin seeds
50g Chilli Powder
25g Onion Granules
25g Smoked Paprika
2 Stock Cubes
5 Bay Leaves
800g Kidney Beans
