As a college student, I am always looking to cook meals that are both delicious and affordable. This chili is so easy, budget-friendly, and delicious! It is a hearty meal that is perfect for a cold, rainy day. And a bonus is that you can make it all in one pot!

One-Pot Chili: (makes about 6 portions)
Ingredients:
– 1 white onion
– 1 lb ground beef
– 1 can kidney beans
– 1 can chili beans (you can also use whatever beans you prefer)
– 1 can diced tomatoes
– 2 spoonfuls pre-minced garlic or 2 minced garlic cloves
– salt
– pepper
– red chili powder
– 2 tbsp tomato paste
– 2 tbsp brown sugar
– 1 packet chili seasoning
– rice and cheese for serving
1. Dice the whole white onion. Saute in a big pot with oil on medium-high heat. Add the ground beef and break it up in the pot as well. Season with salt, pepper, and chili powder to taste.
2. Once the beef has browned, add 1 can kidney beans, 1 can chili beans, and 1 can diced tomatoes. Mix until well combined.
3. Next, add the garlic, tomato paste, brown sugar, chili seasoning packet, and 1 tsp chili powder.
4. Mix until well combined. Lower the heat and let simmer for 10 to 20 minutes or until the chili has thickened.
5. Serve over rice and top with your choice of shredded cheese. (This chili also pairs well with bread or tortilla chips).
