Devon’s Award-Winning Chili
RECIPE COURTESY OF INA GARTEN

Yield: 6 to 8 servings
Ingredients
5 pounds beef brisket, cut in 1-inch cubes
1/4 cup olive oil
2 cups chopped yellow onions
6 large garlic cloves, minced
2 tablespoons chili powder
1 tablespoon red pepper flakes, crushed
1 tablespoon cayenne pepper, or to taste
2 tablespoons ground cumin
2 green peppers, seeded and diced
1 bay leaf
6 cups tomatoes, chopped with their liquid
Salt and freshly ground black pepper
1/2 cup strong coffee
Two 15-ounce cans kidney beans
2 tablespoons chopped basil leaves
Serve with:
Sour cream
Grated Cheddar
Diced tomato
Tortilla chips
Guacamole (see recipe)
Directions
Pat the brisket cubes dry with paper towels. Heat the oil in a very large heavy-bottomed pot and quickly brown the meat, in batches, on all sides. Transfer the brisket to a separate bowl and set aside. Saute the onion and garlic in the same oil over medium heat until limp, but not brown, about 8 to 10 minutes. Add the chili powder, pepper flakes, cayenne pepper and cumin and saute for 1 minute. Add the green peppers, bay leaf, tomatoes with their juice, the reserved meat, 1 tablespoon of salt and 1 teaspoon pepper and bring to a boil. Reduce the heat, cover the pot with a tight fitting lid and simmer for 2 1/2 hours, stirring occasionally. Taste and season with salt, to taste. Add the coffee, cover the pot and simmer for 1 more hour.
Add the kidney beans and basil, and warm through. Transfer the chili to a large serving bowl and serve with sour cream, grated Cheddar, diced tomato, tortilla chips and guacamole.

Interesting chili recipe. But not Texas chili if it has beans or so I've read numerous times, which is fine with me since I don't like beans. Will be saving this for when the weather cools off.

Ina, I put in cocoa powder and a can of pumpkin. Cocoa makes it rich and pumpkin adds a lot of vitamins. You donāt taste either of them in the chili.

I'm from NYC, that is not chili, let alone "NY chili", there is no such thing. What they made is some type of beef stew. Still looks delicious

Beef stock instead of coffee and no TRUE Texan would add beans to their chili.
Did they skip a step? Where did all the liquid come from? Tomatoes couldn't have produced that much liquid.
I think you guys are completely misreading this. Devon did not seem mean or snarky. I think they are actual friends, she was giving me the vibe of why does Ina gets so nervous cooking with others when she is such a great cook.

Wow – all you people throwing shade at Devon. Her and Ina are great friends and they're both New Yorkers. They're not over sensitive like you all. Plus I don't give a damn if you think it's not Texas chili if it has beans. I like the beans and never eat chili without it.

Looking at these comments, this is what I think; Devon won an award for this Chili. So why all the flack? Also how many of the naysayers has won an award for their chili recipe? Also Texas has many different kinds of chili, not just the standard common Texas chili that everyone thinks of.
This looks great. Im not a Basil fan, so I would likely use green chilies and a bit of cilantro. The brisket is an interesting idea. Ive made beef stew with a cup of strong coffee in it. Ill try that sometime.
