


I had read about candied peppers somewhere and the idea stuck in my brain. This batch had 6 large hot Portugals (1st time growing them this year and are a new fave), a reaper and a scorpion in it. I simmered the peppers in a 1:1 sugar to water solution for about 10min until they were looking almost like jewels, cooled then rolled in sugar and dehydrated at 145°F overnight. The taste is good although the flavour of the reaper penetrated all the other peppers – I like their heat but the flavour is not anywhere near as good as even the scorpions.
