Rice and Carrots with Sweet Peppers Recipe

5 carrots. 1 large yellow onion. 2 crushed garlic cloves. 1 sweet pepper or red or orange bell pepper. Jalapeno or any hot pepper (optional). Chopped parsley. Chopped scallions. 2 cups of cooked rice. Salt and pepper to taste. Oil. // Cook the 2 cups of rice in slightly salted water. Set aside. Slice the vegetables. Heat the oil. Add the sliced carrots. Let cook for about 4 minutes. Stir. Let cook again for another 4 minutes. Stir. Let cook until the carrots are tender, stirring occasionally. Add the sliced onions. Stir. Add salt and black pepper. Add 2 cloves of garlic, crushed. When the onions are golden, add the sweet pepper, the chopped scallions, and the sliced hot pepper. Stir. Add the chopped parsley. Add the cooked rice. Mix well. Let cook for 2 to 3 minutes.
