How to prune to keep it under the grow light?

Hi everyone!

I'm growing some hydroponic peppers in the kratky method at home under a grow light. I don't want the pepper to grow too tall and hit the light and start getting some leaf burn so I want to start pruning it to keep it within the right size, and I think I need some advice on this.

Should I snip out the top growth from the center stem?
Should I also be trimming out? Suckers that grow from the side?
Or should I just rejig my setup and make the light taller and allow the plant to grow as big as it can get?
