When to harvest and what to do with these Tabasco

I bought a plant from a local store that was 90 percent off as the plant looked like it was dead. I planted it next to some potatoes and it came back and started producing peppers. I've read that Tabasco peppers should be harvested when green but also read they can turn red before harvesting for better flavor. Tried a bite off one this weekend, extremely hot but not the greatest flavor
