
So, we finally reached the day when we can indulge ourselfs in this delicacy. My wife prefer her chiles en nogada sin capear so that is what we will have (happily)!
The picadillo filling is made with minced beef, platano macho, peach, apple, sultanas, almonds, pine nuts, spices, garlic and onion..
The nogada is rich in walnuts and fresh cream and has both goats cheese and fresh cheese (philadelphia) and a generous helping of mezcal!
Now in the evening I'll grill upp some chicken marinated in an adobo and a coal roasted salsa verde!
