





I made an Al Pastor filling with feta inside (I live in Europe so I don't have access to authentic cotija) topped with a tomatillo salsa with cilantro and onion.
We have never tried tamales before so I hope I did them justice. They were absolutely delicious!

This may be an ignorant comment , but why a salsa on top? You don’t eat the outside corn husk?
To be clear, the corn husk had already been removed before the salsa was put on top 😂
Im not a sweet tamale lover like my dear Mom was but those look fantastic minus the cilantro and onion (for me). Makes me wanna make a batch of pork………🤔

Would you like to know a filling we do ?
(Tamales Verdes ) green tomatillo chicken .
Boil your chicken , add tomato , onion, garlic, some Garlic salt and we add chicken bouillon too.
Not to much.
Roast your tomatillos with some chile serranos, or Jalapeños will do too.
Or you could boil it as well.
Once done add tomatillos to a blender and blend with some salt a garlic clove, and add a bunch of cilantro, not to much.
Once chicken is done. Shred it, then add some oil to a pan/ or pot, wait till it’s hot and add your sauce.
Careful it will sizzle when you pour.
Taste for salt & once it’s good add your chicken.
Let it simmer for a bit
Then that’s it 🙂
Mexican here- you make us proud, those really look amazing. Juicy and delicious. I was gonna tell you to use cheddar like we do in the United States because we would never use feta instead. but fuck it. Do what you want over there. I like Greek food too.
