MACARONI AND CHEESE (pg 202)
8oz dry macaroni, cooked
2Tbsp oil
13oz can evaporated milk
1 1/2c milk
1tsp salt
about 1/2lb (8oz) shredded cheese; cheddar, American, Velveeta, or a combination
2 to 4 melted butter
2Tbsp onion, chopped fine
4 hot dogs, sliced (optional)

In slow cooker, toss macaroni in oil. Stir in remaining ingredients, except hot dogs (if using).
Cover. Cook on Low for 2 to 3 hours. If desired, add hot dogs, and cook for 1 hour longer.
*I used 4oz Velveeta and 4oz of a mix of cheddar and brick cheese. I cooked for 1 hour on low and 1 hour on high.

MARILYN’S CHILI CON QUESO (pg 13)
1Tbsp chopped green peppers
1Tbsp chopped celery (I used dried celery flakes)
1Tbsp chopped onions
2Tbsp diced tomatoes
2tsp chopped jalapeno pepper
1/2c water
3/4c heavy cream
8oz Velveeta cheese, cubed
2oz cheddar cheese, shredded

Place first 5 ingredients in slow cooker. Add water.
Cover. Cook on High for 1 hour, or until vegetables are tender.
Stir in heavy cream and cheeses.
Reduce heat to Low. Cook until cheese is melted. Serve immediately, or keep warm on Low for hours. Serve with tortilla chips.
* I made this with a Little Dipper, cooking the vegetables for approximately 1 hour and 45 minutes, and then melting the cheese and cream together for 45 minutes.

JOYCE’S SLOW-COOKED CHILI (pg 50)
2lbs ground turkey
2 – 16oz cans kidney beans, drained and rinsed
2 – 14.5oz cans diced tomatoes, undrained
8oz tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2Tbsp chili powder
2tsp salt
1tsp pepper
shredded cheese

Brown ground turkey in skillet. Drain. Transfer to slow cooker.
Stir in remaining ingredients except cheese
Cover. Cook on Low for 8 to 10 hours, or on High for 4 hours.
Garnish individual servings with cheese.

  1. Thank you for this video! I have three crockpots in varying sizes as well as a Little Dipper and this was the motivation I needed to dig them out and start using them. Currently they see about as much use as my pasta machine and my ice crusher so I think it’s time to change that!❤

  5. I've had that cookbook for years. Absolutely love it. The recipe l use most is chicken and dumplings recipe. One of my grandkids favorite meals.

  6. I love your videos! One or two drops of hot sauce will eliminate the after taste from the cheese and gives it a perfect taste!

  7. Hello again. I had a Little Dipper and gave it away when I moved from CA to NY. They are pretty easy to find at thrift stores. But I have since bought a little crockpot on Amazon for about 30 dollars depending on the color. The bowl comes out and the cord is detachable which makes it easier for my husband to take it to work with soups, chili etc for lunch. Liked the recipes and plan to try them. 😊

I have recently discovered the power of putting warm or hot ingredients into my slow cooker, (versus fridge temperature. ) For instance- I try to heat up water in the microwave while I’m chopping carrots for soup- so when everything goes in, my slow cooker doesn’t have to spend the first hour “uncooling ” or defrosting ingredients.

  13. I usually add a squirt of yellow mustard to my macaroni and cheese and no one knows my secret ingredient but it just adds a little zest to it! Start with a little and add more until it suits you!

  14. Sometimes the issue with cheddar cheese is that cheddar can get grainy, velveeta is a nice smooth cheese but it probably is better adding another cheese with it as you did. ☺️

  15. That mac & cheese is a total hit at family gatherings. Hope your craft buddies enjoyed it! (I always add a heaping teaspoon of dijon mustard and a healthy shake of black pepper because I can't leave a recipe alone.)

  16. I have that cookbook, I live alone and need to haul it out and try some recipes. The macaroni and cheese is intriguing but my brain can’t accept that it wouldn’t be too soupy with mushy pasta.

  17. I have a tiny crockpot called a Crockette! It’s decades old and I don’t use it often at all, but it’s so cute that I just can’t seem to part with it.
