Ingredients:
– 1-2 fresh green chilies, chopped
– 1 medium green bell pepper, chopped
– 2 cloves garlic, chopped
– 2 tbsp coriander leaves, chopped
– 2 heaped tbsp butter
– 1 cup 4-cheese blend (any combination of mozzarella, cheddar, parmesan, etc.)
– 4 slices of bread
– Freshly cracked black pepper
– 1 tsp chili garlic sauce
Instructions:
1. In a bowl, mix together green chilies, bell pepper, garlic, coriander leaves, butter, cheese, and chili garlic sauce until you have a smooth mixture.
2. Heat a pan or griddle on medium heat. Add some butter and toast the bread slices on one side until golden brown, then flip and toast the other side. Remove from heat and let cool for about 5 minutes.
3. Spread the cheese mixture generously on one side of the toasted bread. Top with freshly cracked black pepper and a little extra cheese if desired.
4. Place the bread on an oven-safe pan and broil on high until the cheese is melted and golden brown.
5. Remove from the oven, cut into triangles, and serve warm with tomato ketchup.
