Ingredients:
• 3lbs Chili Ground Meat
• 1lb Hot Sausage
• The W Sauce Fireshire
• 4 tbsp Meat Church Chili Seasoning
• Heath Riles BBQ Garlic JalapeƱo Rub
• 2 onions, diced
• 1 jalapeƱo, diced
• 2 15oz Cans of Tomato Sauce
• 2 15oz Cans Fire Roasted Diced Tomatoes
• 2 15oz Can of Chili Ready Diced Tomatoes
• 2 Cans of Mild Chili beans
• 12 of of Beer

Directions:
1. Fire up the grill. I stoked the Traeger Ironwood XL with Royal Oak Charcoal Hardwood Pellets and fired it up to 350℉.

2. Saute the veggies. I preheated my Lodge Dutch oven over medium-low heat and added a dash of extra-virgin olive oil. Then, I sauteed the onion and jalapeƱo for about 5 minutes.

3. Add meat. I added the chili meat and hot sausage to the pan, cooking until browned. I drained the excess grease off the meat and turned the burner off before moving to the next step.

4. Add tomatoes. To finish the chili, I stirred in the tomato sauce, fire-roasted tomatoes, diced tomatoes, Heath Riles BBQ Garlic JalapeƱo Rub, and Meat Church TX Chili Seasoning.

5. Start cooking. I turned the burner to low, added the chili beans, Bear & Burton’s W Sauce Fireshire, and brought the chili to a boil.

6. Smoke the chili. I wanted to add a kiss of smoke, so I placed the boiling Ultimate Game Day Chili on the Traeger Ironwood XL and let it simmer for 3 hours. My chili had a total cook time of 4 ½ hours. The only thing left was to take it off the pit and let it cool before digging in.

  4. C'mon Heath…smoke you a chuck roast for about 2 hours (preferably on the top rack over the chili) then cube it up and throw it in there. I'm not a bean-in-the-chili guy either but if that's what you served at your house and I was there, I'd eat the hell out of it.

  5. I have always wondered who wrote the rules for chili. Beans no beans… Every chili is different. I love all chili!!!

  9. Nice, similar to my chili! I use Yuengling as my beer. Need to add Fireshire for my next batch!

  10. Yey, more chilli! That tiny amount would last my husband 3 seconds, he LOVES chilli. Breakfast lunch and dinner. I once made 50 lbs of it and put them into the deep freezer in 1 lb bowls. It was gone in a month. This looks good!
